Ingredients - 2 cups fresh snow peans
- 1/2 cup carrots, sliced thinly
- 1 cup red bell pepper, sliced thinly
- 1 cup sliced mushrooms
- 1 green onion, sliced
- 2 tablespoons lite soy sauce
- 8 ounces whole grain pasta such as penne
- 1 tablespoon finely chopped or ground peanuts
Instructions - Cook pasta according to package directions.
- in a non-stick skillet sprayed with cooking spray, stir-fry vegetables over medium heat until tender-crisp.
- Add soy sauce and pasta. Toss and heat for a few minutes. Sprinkle with peanuts.
