First of all,concerning your teachers,you can take pictures with them,and even invite the one that's like family over for dinner.Also,like KOD said,souvenirs are a good idea.
As for the friends,make the most of these three days ...do something with them: A picnic,go to a resturant ,do something fun and special during those three days
And again take lots of pictures
Also,you should get your friends something,but this time,instead of buying things....make them out of scratch or give them some of your old stuff (something that has a special memory to you guys,something that's related to an inside joke you have) Personal gifts have a strong effect
Also,wherever you're going,remember that you're not loosing your old friends...you're just making new ones
