Lentil Soup --> chorbit 3adas
ingredients: 3 cups lentils 1/2 cup rice (optional) 1/2 cup samneh, or other shortening 1 cup chopped onions 1 1/2 tsp. salt Water preparation: Soak lentils in cold water overnight. Wash and pick over. Place in pressure cooker with water to cover them about an inch. Cook under pressure for 15 minutes. Pass the-soup through a sieve or food mill. Add water to desired consistency. Fry onions in hot fat until brown and add to soup. Simmer for 10 minutes. Add salt. Serve thick and hot with squares of crisp fried bread. sa7ten

Spinach and Rice
![]() Ingredients: 1 medium onion chopped 1 lb fresh spinich 2 cloves garlic 1 cup parsley finely chopped 2 tbl dried mint Preparation: Onion is cooked on low heat until transparent. Just before the onion is finished cooking, garlic is added and cooked for a short period, then the mint and spinach are added and cooked until limp. Add water, rice, salt and pepper - do not stir Cook over medium high heat until it boils, then lower heat and simmer 15 minutes or so or until the rice is done. Any requested recipe??

Chocolate Pound Cake
1 cup butter, room temperature 2 cups sugar 4 eggs 1 (8-ounce) semi-sweet chocolate chips 1 (16-ounce) can chocolate syrup 1/2 teaspoon baking soda 1 cup buttermilk 1 teaspoon vanilla extract 3 cups flour Powder Sugar (optional) Preparation: Preheat oven to 350 degrees. Grease and flour well a bundt pan, leaving 2 inches at the top for the cake to rise. In a large bowl, cream butter and sugar together until fluffy. Add eggs, one at a time; beat until fully incorporated. In a heavy saucepan over low heat, melt chocolate chips; stirring until smooth. Remove from heat. Add chocolate syrup and butter-sugar mixture; stir until well mixed. Add 1/2 the milk mixture to chocolate mixture. Add 1 1/2 cups flour, mixing well. Add remaining milk mixture and remaining 1 1/2 cups flour; beat until well incorporated. Pour into prepared bundt pan. Bake approximately 1 hour 20 minutes or until a toothpick inserted in the center come out clean. Remove from oven and cool 15 minutes on a wire rack; remove from pan and invert onto a cake plate.

![]() 1 cup ground meat 1 cup chopped onion 1 cup pine nuts 1/2 cup samneh (or other shortening) 1 tsp. salt 1/4 tsp. pepper 6 cloves of garlic 1/2 tsp. chopped kizbara (coriander) This is a well flavored dish of very small meat-filled turn¬overs smothered in a rich laban gravy. The unusual flavor comes from the combination of garlic and coriander. Prepare a dough with 1 1/2 cups bread flour, half cup shortening, 1 tsp. salt and half cup cold water. Knead lightly and roll out a thin sheet on floured board. Make the stuffing as follows: Fry onions, pine nuts and meat lightly. Season and mix well.
Cut the dough into circles not larger than two inches in diameter. Put a teaspoon of stuffing on each and fold over. Press edges together firmly. Now bend the half circle so that both ends meet. Place on a tray and dry in a slow oven for 15 minutes. Heat one recipe of cooked laban and simmer the skish barak until the dough seems cooked. Crushed garlic, salt and kizbara should be fried separately and gently in a small amount of samneh to enhance their flavors. If fresh kizbara is not on the market, use the dried or substitute a few pounded seeds. Add to laban and simmer. Serve tepid with rice. Serves six.

Cookies
![]() Ingredients: * 225 g plain Flour * 180 g Butter, softened * 120 g Caster Sugar * 100 g whole shelled Pistachio * 100 g plain Chocolate drops * 100 g White Chocolate drops * 1 large Egg * 1 tsp Bicarbonate of soda Method: * Preheat the oven to 180 C * In a large bowl, mix butter and sugar together, then beat in the egg and mix well. * Mix the flour with bicarbonate of soda and mix with the butter mixture. * Add chocolate drops to the mixture. * Line the baking tray with foil and put a spoonfuls of the cookie mixture on the foil, leaving enough distance between individual cookies. * Cook in the oven for 15 minutes then remove the tray from the oven and leave it for 2 minutes before trying to remove the cookies. * Serve the cookies cold with tea or a glass of cold milk. ![]()
